Beans Casserole

Cazuelas Paisas de frijoles (Beans Casseroles) contain a high amount of carbs and fat because they are a small version of the Bandeja paisa, a traditional Colombian food. It is called a casserole for the type of container used to be presented. The casserole is a deep galvanized baked clay bowl, which keeps the food warm. It is called paisa because it comes from Antioquia and the coffee region where it has the highest consumption..


The ingredients are the same as in the Bandeja paisa but diced differently, also it's served in a casserole instead of a flat plate. Casseroles are perfect for lunch because there is more time to digest all these ingredients, but also, it goes very well at dinner.


Inspired by Colombian food, today I am going to show you how to prepare a vegetarian Beans Casserole my way.



INGREDIENTS


1 pound of dry Romano Beans

✅ 4 cups of water

✅ 1 small carrot

✅ 2 ripe plantains

✅ 2 cups of cooked white rice

✅ 6 eggs

✅ 2 tomatoes

✅ ¼ big onion

✅ 1 garlic clove

✅ 1 small bag of Potato Sticks

✅ Coriander



HOW TO MAKE


Step 1

In a manual pressure cooker, put the 4 cups of water; when it’s boiling, add the beans and the carrot previously washed. Cover the pot and let it steam over medium-high heat.


Step 2

When the pot begins to beep, reduce the heat to medium, and cook for 20 to 25 minutes. Once the time has elapsed, turn off the stove and let the pot depressurize by itself.


Step 3

Set aside while the beans cook, cut the tomato, onion, cilantro, and garlic into small squares, and sauté in a frying pan for 8 minutes over medium heat until they form a stew.  (Leave some chopped cilantro on the side for later use.)


Step 4

Once the pot is depressurized, uncover; Scoop out the carrots, two tablespoons of beans and pour them into a blender. If there is enough bean broth, scoop out a ladle and pour it into the blender, if not add water from the tap. Blend it until you have a thick, runny mixture. (If it is very thick, add a little more water or bean broth)


Step 5

Pour the mixture into the pot, add salt to taste, as well as the tomato stew and let it thicken over low heat for 10 minutes until it boils. (Make sure to stir it, so the beans don't stick to the seat).


Step 6

While the beans boil, on a kitchen board, peel the ripe plantains and cut them into small cubes. In a separate pan, fry it until they are golden brown.


Step 7

In another small pan, make sunny side eggs to your taste (hard or soft yolk).


Step 8

Peel the avocado and cut them into cubes like the plantains and put them in a cup


How to serve


Once you have everything ready, serve one casserole at a time. Start by adding a ladle of beans, then the rice on top (3 tbsp.), continue by the plantain cubes, the avocado, the potato sticks, and finally the sunny side egg. Garnish by sprinkling cilantro on top. Now, ready to eat.  (Repeat the same process for the other pans).



Companions

Serve with a salad of lettuce, spinach, cucumbers, tomatoes, and arugula and if possible with small arepas.


Pairing Beverage

Because of its flavor and high-calorie content, ice-cold beer combines well with beans, much better than natural juices. If you want something more gourmet, accompany them with young red wines such as Malbec, Merlot, and Tempranillo.


Recommendations

I only buy president's choice PC Blue Menu, Romano Beans with a speckled cream, and pink skin that darkens once cooked because they have a mild, sweet taste that works perfectly, also those are similar to the Colombian beans cargamanto.


Traditionally, in Colombia the beans are soaked the night before, making them cook faster. With the Roman beans, I think it is not necessary, when immersed in hot water they cook quickly.

For the potatoes Sticks, I buy the "Hostess Hickory Sticks Original" in any president choice store.
