Plantains are a must when it comes to making a quick, homemade meal. Plantains are an ideal ingredient when you are looking to add a touch of sweetness to a recipe, or when you want to make a tasty dessert. They can also be made into fried slices, toasted into chips, or simply cooked.
Today I bring to your tables, Stuffed Baked Plantains with lentils
How to make
INGREDIENTS
✅2 ripe bananas
✅½ cup of cooked lentils
✅1 tomato
✅¼ of white onion
✅ Coriander
✅ Parsley
INSTRUCTIONS
Step 1
Preheat the oven to 400ºF.
Step 2
Peel plantains and place in pre-greased baking dish; cook plantains 10 min per side.
Step 3
In a saucepan, sauté the previously chopped vegetables (tomato, onion, parsley, and coriander) over medium heat for 8 minutes until they form a stew.
Step 4
The lentils should be cooked first, add to the stew and cook for 5 minutes.
Step 5
Remove the plantains from the oven and cut gently in half, garnish with lentils and add the cheese.
Step 6
Finally, return to the oven for 5 minutes and place in the grill at a low temperature to melt the cheese.
Accompaniments
Serve with fried rice, salad, and garnish with cilantro.
