Stuffed baked Plantain 🍽

"Plantains are similar to bananas; however, plantains need to be cooked before you eat. Green plantains may be more popular because they are used to make chips or tostones, but when the plantains are very ripe, almost black, that’s when they are at their sweetest! That’s what you want here, not yellow because they won’t be sweet and soft enough. They should be soft and the skin almost black".
 
How to make

INGREDIENTS


🌱 2 dark yellow skin plantains

🌱1/2 cup Ground veggie meat

🌱1/2 cup grated mozzarella cheese

🌱3 tbsp chopped Black Olives

🌱Arugula

🌱1 tbsp Parmesan cheese

🌱5 Cherry tomatoes

🌱Cilantro

🌱1/4 Garlic

🌱1/4 Onions


INSTRUCTIONS

Step 1

Preheat the oven to 350°F


Step 2

Peel the plantain skin and place plantains in a greased baking tray. Put the tray in the oven for 10 min.


Step 3

While the plantains bake; Separately, put the ground veggie meat in a pan, add chopped onions, cilantro, and garlic. Allow it to cook over low heat for 10 minutes.


Step 4

When the 10 minutes are up, remove the plantains from the oven, flip and return for another 10 minutes.


Step 5

Once the plantains are done, remove them from the oven. Keep the plantains in the tray and gently open them in half with a knife. Now, stuff the plantains with the ground veggie meat, and garnish with grated mozzarella cheese; then, return to the oven in (broil-Hi) for 1 min to allow the cheese melt.


Step 6

Bring the plantains out of the oven, place them on a plate, add chopped olives, arugula, and tomatoes on the top. Also, spread Parmesan cheese on the entire surface

Accompaniments

Serve warm. You can also add avocado if wanted.

Beverage pairing

"Stuffed plantains go very well with dry wines with moderate acidity; such as Pinot Grigio, Chardonnay, and Sauvignon Blanc, which are generally consistent with the texture and sweet flavor of the baked plantain"
