Stuffed Sweet Potatoes

"That sweet, orange-colored root vegetable that you've heard so much about it, so-called "yams" they are in fact sweet potatoes. Most people think of long red-skinned potatoes as yams, but they are really just one of many varieties of potatoes".


Sweet potatoes are almost always sweeter than yams. They have a versatile flavor that is easily altered by cooking methods.

“Sweet potato has a moist texture and sweet taste that pairs well with a wide variety of spices and preparation styles. Baking or roasting will bring out the earthy flavor of this root vegetable, while thinly slicing and frying it will produce both salty and sweet potato chips. Sweet potato pairs well with a variety of wines as it is such a versatile vegetable. "

INGREDIENTS


1 large sweet potato

1/2 cucumber 🥒

1/2 green apple 🍏

1 tomato 🍅

1 avocado 🥑

3 mushrooms

1 small onion


INSTRUCTIONS


Step 1

Preheat the oven to 400 F


Step 2

Cut the potato in half and put it in a previously greased baking dish. Oil the potatoes, with a kitchen brush. Add salt, coriander and garlic powder, you can also add julienned onion. Bake them for 50 min to 1 hour.


Step 3

While the potatoes are baking, cut the vegetables into small cubes and fry them in the skillet for 10 minutes over medium heat.


Step 4

When the cooking time for the potatoes has elapsed, touch the center of the potato with the tip of a knife or fork to see if it is tender. With a knife, carefully cut it into an oval shape without touching the bottom. Remove this part with a spoon, forming a wide hole. (Watch the video with the instructions).


Step 5

Fill the potato with the vegetables previously fried in the pan, add the grated cheese last. Bake for 2 minutes on the "low grill" / "Broil, gratin" option to allow the cheese to melt.


Step 6

Remove the potato from the oven. Serve it preferably hot on a flat plate.


COMPANIONS


You could accompany it with a light salad; In my case I made a salad of arugula, spinach, cherry tomatoes, avocado and I sprinkled grated coconut.
