Stuffed Portobello Mushrooms

Updated: Sep 26, 2021

Portobellos are one of the most commonly and widely consumed mushrooms in the world. Mushrooms are a source of vitamins and energy. Don’t you have time to cook? Don’t worry, with this #yummy dish you will have a real meal within minutes.

One of my favorite dishes. I love mushrooms' texture and flavor. Let's start working on it.

20 Minutes

2 portions

How to make

INGREDIENTS ✅ 4 Portobellos ✅ 1 pepper ✅ 1/2 cucumber ✅ 1/4 onions ✅ Shredded cheese ✅ 1 Avocado 🥑 ✅ Parmesan cheese ✅ 1 Garlic

INSTRUCTIONS

Step 1 Preheat the oven to 350F

Step 2

Chop the vegetables (cucumber, peppers, and onion. Put it in a pan on medium heat for 5 ‎minutes. Add the seasonings you want (Italian herbs, paprika, cumin, coriander powder, black pepper, ‎etc.‎) Step 3 On a baking tray, spray a little avocado oil. Wash the mushrooms and spray them with oil, put them on the baking tray, and remove the gills with a spoon.‎

Step 4 Once the vegetables are cooked, fill up the portobellos and take them to the oven. Let the Portobellos bake for 10 minutes.‎ Step 5 Remove the mushrooms from the oven and add the grated cheese on the top, then put it ‎back to the oven for 2-5 min in grill-low option to let the cheese melt‎ ‎Step 6

Serve on a flat plate, add cilantro leaves on the top and spread a bit of Parmesan cheese, and ‎accompany by salad, avocado, couscous, roasted potatoes, or quinoa‎

Note: The mushrooms go with all meals and their smooth texture, with the melted cheese, gives a rich ‎flavor. Also, I recommend drinking dry red wine, it's a perfect match.
